Halloumi Salad with Orange and Mint

This colourful salad is a real showstopper and is so easy to make. A little bit fancy and very tasty, It will appeal to even the fussiest of eaters and convert your ‘non-salad eaters’ into salad lovers.

Prep 15 minutes | 5 minutes cooking time | Serves 4

Ingredients:

  • 3 medium oranges, segments and juice
  • 1 small bunch of mint leaves, chopped
  • 4 tsp white wine vinegar
  • 3 tbsp olive oil
  • 2 x 250g packs of halloumi cheese, drained
  • 50g walnut pieces, toasted
  • 145g rocket, watercress and spinach

Instructions:

Step One:

  1. Heat a large griddle or frying pan over a high heat.
  2. While the pan is warming up, grab a large bowl and combine the orange segments and juice, mint leaves, vinegar and olive oil. Season, and gently toss together.

Step Two:

  1. Slice each block of the drained Halloumi into 8-10 slices, then griddle or fry on each side until charred and the cheese is starting to melt.

Step Three:

  1. Add the toasted walnut pieces and salad leaves to the orange and mint before tossing it all together. Top with the griddled Halloumi slices and season with some black pepper.
