Matariki Apple Pie

With apples in abundance at this time of year and the cold wintery evenings, it feels like the perfect time to make this easy and delicious pie. Our passionate home cook, Amanda created something special to celebrate Matariki, Māori New Year in New Zealand. The Matariki stars number nine, so you might need to cut a slightly larger slice that has the correct amount, just to make it official.

Prep/Cooking time 1 hour | Serves 6-8

Equipment:

  • A cast iron fry pan
  • A medium saucepan

Ingredients:

  • 10 apples – whatever you have handy – we used overripe queens and green granny smith apples
  • 1/2 cup sugar
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • short/sweet pastry sheets 2-3

Instructions:

  1. Peel core and slice your apples. Add them to a saucepan with the sugar, cinnamon, nutmeg. Cover and bring to a simmer, stirring occasionally, and cook until the apples are semi-soft (about 5-6 minutes). Allow to cool. 
  2. Line your cast iron fry pan with baking paper and press in your thawed frozen sweet short pastry sheets, cutting the pastry back flush to the rim of the pan
  3. Cut star shapes from your remaining pastry and arrange, overlapping on top of your pie mixture. 
  4. Bake in the AGA baking oven, or in a conventional oven on 180°C until the pastry is crisp and golden (around 45 minutes)
  5. Serve warm or cold with cream or ice cream as desired. Seconds are recommended.
